Typically, brill is brown and covered with varying-coloured flecks – but this chameleon of the seas also has the ability to match the colour of its sandy surroundings.
The story of Cornish Waters Brill
Its mutability made this brill a fascinating fish to work with. Its skin represented a complex of exquisite detail, with a distinctive spot on the linear line. Touching its head, I could feel a structure of interlocking plates, perhaps formed during its transition from pelagic to flat fish. Nature truly is incredible.
